The newest trend in healthy eating is here and it’s the perfect time to dive in. The Spiralizer cuts vegetables into long ribbons or strips that resemble noodles or spaghetti.  This awesome tool can be purchased for just $15 and will completely open your eyes to substituting vegetables for pasta. Zucchini isn’t the only vegetable you can spiralize; butternut squash, potatoes and onions are also great options!

Here is an awesome recipe for Zucchini Shrimp Scampi that is easy, healthy and delicious. Not to mention it clocks in at just under 214 calories per serving! And with a taste like this, it is sure to make you forget about your spaghetti noodles.

Ingredients:

  • 2 tablespoons of unsalted butter
  • 1 pound of medium sized shrimp, peeled and deveined
  • 3 cloves of minced garlic
  • ½ teaspoon of red pepper flakes
  • ¼ cup of chicken stock
  • The juice of one lemon
  • 4 medium sized zucchinis, spiralized
  • 2 tablespoons of freshly grated Parmesan cheese
  • 2 tablespoons of freshly chopped parsley

 Directions:

  1. Melt the butter in a large pan over medium high heat. Add in shrimp, garlic, and red pepper flakes. Cook and stir occasionally for about 2-3 minutes.
  2. Stir in chicken stock and lemon juice. Season with salt and pepper to taste. Stir in the zucchini noodles and combine for 1-2 minutes.
  3. Serve and garnish with parmesan cheese and parsley.

Ingredients:

  • 4 cups of seedless watermelon chunks
  • ½ cup of sugar
  • The juice of 1 lemon

Directions:

  1. Combine all ingredients in a food processor or blender until smooth.
  2. Pour into a shallow, wide pan and freeze for 1 hour
  3. Rake mixture with a fork and freeze for another hour (Repeat this step 2 more times) Then serve.

Grilled Peaches with Honey and Yogurt

  • ¼ cup fat free vanilla Greek yogurt
  • 1/8 teaspoon of cinnamon
  • 2 large ripe peaches
  • 2 tablespoons on local or raw honey

Directions:

  1. Combine yogurt and cinnamon
  2. Grill peaches, covered on low or indirect heat until soft, usually about 2-4 minutes on each side
  3. Drizzle with honey and serve each with one tablespoon on yogurt
